Acetaia La Vecchia Dispensa

The ancient medieval village of Castelvetro is located in the quiet countryside of Modena, immersed among the green hills that are famous for the production of the Traditional Balsamic Vinegar of Modena and the Lambrusco Grasparossa.

One of the specialities produced by La Vecchia Dispensa is the precious Balsamic Vinegar with one of the first production licences, the number 13. Its vinegar cellar is kept in the inside of a tower dated back to the 16th century and it is a unique opporunity to visit. A real dive in the past, in a timeless atmosphere, among balsamic intense fragrances and fine vinegar barrels.

The Historical Acetaia, belonging to the Pelloni-Tintori family, produces and ages Balsamic Vinegar by four generations. The fascinating visit, full of history and passion, allows knowing in details the secrets and characteristics of this extraordinary product, the qualities and differences among the various productive processes with designations PDO (Protected Designation of Origin) and PGI (Protected Geographical Indication).

At the end of the visit, it is possible to have a guided tasting of five different products: three Balsamic Vinegar with PGI and two special Traditional Balsamic Vinegar with PDO. During the tasting, the visitor will learn some good recipe to better use this "black gold".

It is possible to discover many specialities beyond the Balsamic Vinegar. Indeed, La Vecchia Dispensa is chosen as destination of demanding gourmet coming from all over the world and who here have the occasion to find seasonal delicious delicacies of Modena: sauces, jams, liquors, wines, desserts and many others.

La Vecchia Dispensa is open and available all the year round, but the visits are suggested in spring and autumn.
