Produzione di Aceto Balsamico Tradizionale e Agromela
The Acetaia comunale “Città di Vignola” was conceived from an idea from associates of the Consorteria Aceto Balsamico Tradizionale of Spilamberto and enthusiasts of the “Aceto di Miele” who put forward their plan to the local authorities. Their dream was to open an Acetaia at Villa Tosi-Bellucci, seat of the Municipality of Vignola, in the premises of the turret clock. This location was considered ideal in that it would guarantee hot and dry conditions in summer and cold and dry conditions in winter.
The Acetaia was opened in October 1999, availing of a battery of barrels from Aceto Balsamico Tradizionale di Modena (ABTM) and Agromela di Vignola. It was headed up by volunteers from the Consorteria di Spilamberto, the Comunità di Vignola and the Associazione Agromela di Vignola.
Aceto Balsamico Tradizionale di Modena is produced from a mosto cotto of Trebbiano, Lambrusco and other grapes, appropriately acetified and placed in barrels of different woods (oak, cherry, ash, juniper, chestnut etc.) for the refinement and subsequent aging process.
Agromela di Vignola is produced from honey which is also placed in sequential wooden barrels for appropriate ageing.
Regional context
Vignola is located on the banks of the Panaro river and enjoys rich, fertile land from which the townsfolk have always achieved excellent produce, which is of both national and international interest such as “Ciliegia di Vignola PGI”. It is a land of “frontiers”, producing products both deriving from the plains and those cultivated on the nearby Apennine hills.
The “D.O.P” recognition(Denominazione di Origine Protetta or Appellation of Protected Origin)
In 2013, in an official ceremony in the picturesque Piazza dei Contrari, the first bottling of Aceto Balsamico Tradizionale di Modena, produced in the Acetaia comunale, with D.O.P recognition was celebrated. This European accreditation gives the product international importance in that it is made within the strict regulations governing the production processes.
Tours of the Acetaia are led by volunteers and only available through prior booking.
