How Traditional Balsamic Vinegar of Modena is made in Castelnuovo

The ‘Acetaia Comunale’ is a small jewel inside the medieval tower with access from the Town Hall’s Council Chamber. The 'black gold' contained in six oak casks of 50, 40, 30, 22 and 15 litres has recently obtained PDO registration.

The ‘Acetaia’ is an integral part of Castelnuovo's tourism offer: in addition to producing a Traditional Balsamic Vinegar certified by the ‘Consorteria dell'Aceto Balsamico di Spilamberto’ (Traditional Balsamic Vinegar Consortium based in Spilamberto) and organising guided visits for students, it also promotes guided tours for tourists, to introduce them to the history of our local treasures and tradition.

VISITS TO THE ACETAIA

Free guided tours (booking required) lasting 30 minutes, organised by the ‘Consorteria dell'Aceto Balsamico Tradizionale di Spilamberto’. A tasting session is planned at the end of the visit.
