For many years now, the Museum of Traditional Balsamic Vinegar of Modena along with the Consorteria, the Botteghe di Messer Filippo and the Municipality have organized MAST COT, an event dedicated to boiling must outdoor, which is held on the first weekend of October in Spilamberto. The moment in which Traditional Balsamic Vinegar came to life is celebrated in the evocative old town centre, home to the only museum dedicated to this food and wine excellence.
The Consorteria, a no-profit cultural association that takes care of the tradition, history and production of Traditional Balsamic Vinegar of Modena, calls together the communities. Visitors can watch must being boiled, the so-called “Bollitura” (the most important and delicate part of the production of Balsamic Vinegar), over a slow heat in the characteristic pots called “paioli”, watched over carefully by the masters of the communities.
Thanks to the partnership between the Museum, Consorteria of the Traditional Balsamic Vinegar of Modena, the Botteghe di Messer Filippo and the Municipality, this event, characterized by the development and promotion of agricultural production and typical products, has become an awaited event at a regional level in the scene of autumn initiatives.
